We’ve a jar of @bigredkitchenie Lemon Curd that we want to use for an Easter Sunday Lunch dessert, and this may be the ideal way!
You can of course make your own meringues, or you can make it easier for yourself and buy them in the shop! Whatever your mood!
Gently fold the lemon curd in to heavy whipped cream. Taste for amount of lemon curd, will depend on personal preference.
You can add a dollop of cream on top, maybe some coconut flakes … and then the all important mini eggs! (*Be careful of these with younger children)
For kids or anyone who doesn’t like cream, you could use vanilla ice-cream instead!
