Pumpkin Seed Pesto

She has shared three fabulous recipes with us to prevent wasting pumpkin seeds this Halloween.

 

First up is this gorgeous recipe for Pumpkin Seed Pesto:

INGREDIENTS:

  • 150g roasted pumpkin seeds
  • 50g fresh basil leaves
  • 3 cloves garlic
  • 50g grated Parmesan cheese
  • 120ml extra virgin olive oil
  • Salt and black pepper to taste

 

METHOD:

1.Preheat oven to 150 Degrees Celcius and roast pumpkin seeds for 30-40 minutes until golden and crispy. Allow to cool.

2.In a food processor, combine roasted pumpkin seeds, basil, garlic and Parmesan cheese. Pulse to combine.

3.While blending, slowly add olive oil until smooth. Adjust consistency with more oil if needed.

4.Season with salt and pepper to taste.

5.Toss with cooked pasta, spread on sandwiches, or use as dip.
