Orla McAndrew, Zero Waste Caterer @orla_mcandrew_food has very kindly shared three fabulous recipes to prevent wasting pumpkin seeds this Halloween.
Up next is her second recipe for Spicecd Pumpkin Seed Butter:
- 250g raw pumpkin seeds
- Honey or maple syrup to taste
- Pinch of salt
- Ground cinnamon, nutmeg and ginger to taste
1.Preheat the oven to 150 Degrees Celsius. Spread the raw pumpkin seeds on a baking sheet and roast for 15-20 minutes until golden and slightly crispy. Allow them to cool.
2.In a food processor, blend the roasted pumpkin seeds until they form a smooth paste.
3.Add honey or maple syrup for sweetness, a pinch of salt, and ground cinnamon, nutmeg and ginger to taste.
4.Blend until the mixture is creamy and well combined.
5.Spread on toast, use as dip for apple slices, or add to smoothies for a nutty boost.
