Pasta Sauce with Chorizo Meatballs

Pasta Sauce:
2-3 packets of baby vine tomatoes
Half jar of black pitted olives
1 red onion finely sliced
3 garlic cloves
10 fresh basil leaves
3 tablespoons of brown sugar

Roast all above on a tray in oven at 180 until soft.
Remove, add to saucepan and blitz until smooth. Add some extra passata sauce to bulk up .

Chorizo Meatballs:
500g round steak mince
120g chorizo chopped
60g breadcrumbs
1 garlic crushed
Small onion finely diced
1 small egg
30g Parmesan grated

Mix meatball ingredients until combined.
Shape into 3/4 balls

The pasta sauce and meatballs can be slow cooked together for 45mins to 1 hour (brown the meatballs if slow cooking ) or they can be cooked separately (ensuring meat cooked through) and mixed together.

Serve with pasta and enjoy!
