Pasta Sauce with Marinated Chicken

A nice after school dinner which makes enough for two days!


Pasta Sauce:
2-3 packets of baby vine tomatoes
Half jar of black pitted olives
1 red onion finely sliced
3 garlic cloves
10 fresh basil leaves
3 tablespoons of brown sugar

Roast all above on a tray in oven at 180 until soft.
Remove, add to saucepan and blitz until smooth. Add some extra passata sauce to bulk up .

Marinated Chicken:
Marinade the chicken breasts in lemon juice (1lemon)
drizzle olive oil
2 crushed garlic clove
Greek yogurt (3 tblsp)

You can do this a couple of hours in advance and place in fridge.

Grill for 7-8 mins

Add to deep baking tray and cover with pasta sauce, whole black olives and grated Parmesan on top .

Place in oven and cook until chicken is white through .

Serve with pasta and homemade garlic bread.
