If you’re looking for a really nice, easy dinner recipe, you’ve got to try Deliciously Ella’s Ten Minute Tomato Pasta. We’ve been making it for over two years and it’s always a hit! It has gotten us out of many an evening where we realise we don’t have much for dinner .. then this recipe (or some version of it!!) to the rescue! Literally the easiest dinner ever … can use up leftovers it is great cold for lunch the following day. And best of all … the kids adore it!!
Recipe: Serves 4
Ingredients:
600g pasta (we use a gluten free brown pasta)
500g cherry tomatoes
2 x 400g tins tomatoes
4 tablespoons tomato purée (we don’t always have this so we add more tomatoes / water)
6 tablespoons apple cider vinegar
2 tablespoons tamari (gluten free soya sauce)
2 x 400g tins black beans
Optional: 1 bag of spinach
Olive oil
Salt and pepper
Method:
Cook the pasta. While the pasta cooks, make the sauce.
Start by chopping the cherry tomatoes into quarters, then place the chopped tomatoes into a large saucepan with the tinned tomatoes, tomato purée, apple cider vinegar and tamari, plus salt and pepper. Allow them to simmer into a sauce for about 5 minutes.
Open the tin of beans, rinse and drain them before stirring them into the sauce along with the spinach, if you’re using it.
Once the pasta is ready, stir the sauce in and drizzle the olive oil over the top.
Top Tip:
Ella’s top tip is to use up any leftover ingredients and we totally agree!! Everything and anything goes into it when we’re making it, (especially at the end of the week!) so, carrots, courgettes, mushrooms, broccoli, aubergine.. basically whatever is in the fridge or the vegetable basket! We also omit things if we don’t have them. The absolute necessities for us are the tomatoes and pasta .. we can make do with other variations and it’s always devoured!!
